What is Kombucha?
Kombucha (also referred to as Kombucha Tea) is a category of functional, non-alcoholic/low-alcohol beverages produced by aerobically fermenting sweetened tea (Camellia Sinensis) using a symbiotic culture of bacteria and yeast (SCOBY). The resulting beverage is typically slightly tart yet sweet, and lightly effervescent.*

Is there alcohol in J’s Kombucha?
There is less than .5% alcohol in J’s Kombucha, which is a very small amount compared to beer, which typically has 4-7%.

J’s Kombucha is brewed in kombucha-specific symbiosis fermenters from Stout tanks and Kettles to ensure there is less than .5% alcohol. Stout's “kombucha-specific shape provides a balanced environment for both the Saccharomyces yeast and the Acetobacter bacteria strains. Ethanol is metabolized to acetic acid much faster, promoting faster and more complete fermentation. Balance of symbiosis is shifted toward bacteria, reducing overall alcohol production, and yielding better flavor profiles. Individual trays provide contact to oxygen, allowing the aerobic bacteria to metabolize ethanol to acetic acid, sugars to lactic acid, and glucose to gluconic acid.”**

Is J’s Kombucha pasteurized?
J’s Kombucha is not pasteurized. The pH of kombucha is naturally antipathogenic and contains beneficial microorganisms that make pasteurization unnecessary. Pasteurizing kombucha would also be harmful to the beneficial living culture and ferments within it.

How do you store J’s Kombucha?
Kombucha must be kept refrigerated, store between 33° and 40° F to retain the best quality and flavor. J’s Kombucha contains living culture and ferments that have slowed by a lower temperature that causes the microorganisms to go dormant. Kombucha may gush or leak if left in an airtight container or unrefrigerated.

Is there caffeine in J’s Kombucha?

Why does J’s Kombucha use aluminum cans instead of bottles?
J’s Kombucha is available in aluminum cans because they're highly recyclable, shatterproof, airtight, lightweight, and since kombucha is light sensitive, the light-proof protection offered by the aluminum cans helps keep the kombucha fresh until it is ready to be enjoyed.

Is J's Kombucha organic?
J's Kombucha is not currently a certified organic product. However, all of the ingredients - teas, fruits, cane sugar, and herbs - in our kombucha are organic. We hope to be a certified organic producer in the future and are currently taking steps toward achieving this.

Can you recycle PakTech handles?
PakTech handles are created from post-consumer recycled (PCR) plastic. While PakTech handles can be recycled, some recycling facilities do not recycle rigid plastics. Alternatively, used PakTech handles can be brought to many local breweries, or anywhere that is a PakTech drop-off site where they are collected and returned to PakTech for recycling. There are currently several drop-offs in the twin cities, some of which are listed on PakTech's website.
